Steps to make Creamy and Spicy Egg Malai Kofta:
- Heat oil and ghee in a wok. Add cumin seeds,when it turns brown add onions, cardamom, ginger, garlic, green chilli and cashew. Saute it till onions become light brown. Add tomatoes salt and 2-3 tbsp water. Cook it for 3-4 minutes.
- Turn off the flame. Let it cool. Transfer it in a mixer jar, grind it well and make smooth paste. Sieve it with sieve.
- Grate boiled eggs.Take a mixing bowl. Add all the ingredients of kofta. Mix all the things well. If the mixture seems wet, add more corn flour.
- Grease your hands take some mixture and make flatten ball.
- Heat oil in wok. In medium flame deep fry all the koftas till it becomes golden brown and crispy.
- Heat ghee and oil in a wok. Add green chillies, ginger roast it, add Kashmiri red chilli powder, turmeric powder, coriander powder, garam masala. Stir it. Add grinded masala and fresh cream. Stir it continuesly. Cook on low medium flame for 4-5 minutes. Add salt, kasuri methi. To maintain consistency add water.
- Now add kofta. Gently coat the gravy.Add fresh coriander leaves. Turn off the flame.
- Garnish with fresh cream. Serve hot with naan, fulka or biryani.
