Instructions to make Shahi Rabdi Kulfi:
  1. Take a heavy base pan and keep milk for boiling.
  2. After the 1st boil lower the flame and let it boil till it reduces to 3/4 litre.
  3. Keep scrapping the sides to get the proper taste of Kulfi.
  4. Now add rabdi and elachi powder stir it well and let it boil for sometime.
  5. Now add the jaggery powder stir it well to dissolve it nicely.
  6. Keep stirring continuously and scrape the sides also. - Boil till you get a thick consistency. - Off the flame and let it cool.
  7. Now pour the mixture in kulfi moulds and freeze it for 5-6 hours or till it is set.
  8. Now take one mould rinse it in running water just for a second to unmould the kulfi.
  9. Cut into pieces and drizzle some chopped almonds and serve chilled.

  11. Keep milk for boiling in a heavy base pan.
  12. After 1st boil keep the flame on low and let it boil till the milk quantity reduces to half.
  13. Now add milkmaid and elachi powder
  14. Keep stirring in between to avoid sticking and burning. - Boil till you get a thick consistency of Rabdi.
  15. Let it cool and keep in freezer to serve chilled.
