- When cooked, put the courgettes on a serving plate. Juice the lemons onto the baking tray to de-glaze it, and pour that liquid on top of the cheese.
- Spoon the cheese mix on top of the courgettes and serve.
Serve with couscous, dress with mint and basil, and top with feta to transport your Stir gently to combine. Add the courgette and toss gently. Transfer to a serving bowl or platter, crumble over the feta and drizzle over the remaining. Finely crumble the feta into a large bowl, then stir in the lemon zest and juice, crème fraîche, olive oil, rocket and prawns. Drain the pasta and courgettes, then immediately tip into the feta bowl.
