- Heat oil in a pan. Add the curry paste and cook till it releases oil. Now slowly add the coconut milk stirring continously. Add vegetable stock to adjust the consistency. Now add the salt, sugar, kafir lime leaves and bring it to a simmer on low flame.
- Take a bowl. Plate a layer of the Noodles, the steamed veggies, and pour the curry over the noodles to the brim. Top with spring onions and peanuts and serve warm with a lemon wedge.
