Instructions to make Khaman dhokla:
- Place the steamer on low medium flame. Grease the steamer tin with oil.
- Add besan to mixing bowl. Add salt, sugar, lemon juice and turmeric powder. Mix well.
- Then add water gradually to make medium thick batter. Now add fruit salt and stir in one direction for a minute.
- Pour the batter into greased tin and steam for 15 to 20 minutes.
- After 20 minutes take out the plate from the steamer and let it cool down.
- Then heat the oil in a small pan. Add mustard seeds, cumin seeds. Let them splutter. Add green chillies, curry leaves and asafoetida.
- Switch off the gas.pour the tempering over the prepared dhokla. Cut into pieces and serve.
