Instructions to make Khaman Dhokla:
- Have all ingredients ready
- Ensure to sift the chickpea flour well to remove any lumps. To the Chickpea flour add salt, turmeric powder, grated ginger, turmeric water or oil, curd and mix well
- Now add water little by little and keep mixing. Until you achieve a flow consistency as shown in pic
- Take a steamer or a deep utensil and keep a stand in the middle and add water to produce steam.
- Once the steamer is ready, we can prepare our batter for instant fermentation. Add eno fruit salt to the batter and genty mix. Dont mix quickly or for longer time. we need air pockets in the batter..
- Grease a tin and tranfer the batter immediately to it.
- Cover the tin into a clean cloth and place it in the steamer. close the steamer lid and cook for 40 to 45 minutes
- In the meantime let us prepare tadka. For tadka heat oil in a kadhai or wok.
- Once the oil is hot, add mustard seeds and green chillies
- Add curry leaves.
- Add water and sugar and mix well. Bring it to a boil and switch of the gas. Tadka is done
- After 45 min open the steamer, take the tin out and check with a knife whether the dhokla is done or not. Insert a knife, if it comes clean means dhokla is cooked
- Let the dhokla cool down for 10 to 15 min in room temperature. once cooled, filp it to a plate
- Cut into desired shape.I preder squares.
- Bring the tadka. you may slightly warm the tadka if it has cooled and pour over the dhokla
- Your khaman dhokla is ready to serve. this dholka turns out to be very soft and very spongy. Do try this
