Instructions to make Dhokla:
  1. Take 2 cups of gram flour / besan and sieve it in a bowl.
  2. Now to the besan add 2 tbsp powdered sugar some salt, 1/2 tsp turmeric,1 tsp hing, a piece of crushed ginger and 4 small crushed green chillies.Mix all of them well.
  3. Now in a small bowl add 1 tsp of citric acid and dilute it with some water. Pour it into the mixture of besan.
  4. Now keep on wisking and gradually add 2 cups of water in a batch of 1/4 cup at a time.
  5. Now when all the water is mixed with the flour then add 2 tsp of oil and keep on wisking the batter at least for 5-6 mins continouslly.
  6. Now after wisking of 5 mins cover the batter and let it rest for 20-30 mins.
  7. By the time take a kadhai. Pour some water in it and place a wire rack over it. Turn on the flame and let the kadhai pre heat at a low flame.
  8. Take a cake mould and grease it with some oil.
  9. After 30 mins whisk batter for a minute and then add a tsp of baking soda. Now whisk the batter for at least 2 mins. As soon as you add baking soda you will observe that batter will increase in it's volume and look fluffy.
  10. Now pour the batter in greased cake tin and put it in the kadhai, on the wire rack. Cover the Dhokla with a lid amd let it cook for 30 mins on low medium flame.
  11. After 30 mins check the dhokla using a toothpick. If the toothpick comes out clean dhokla is ready.
  12. Run a knife along the sides of mould and demould the dhokla. Dhokla is ready lets now make it's syrup.
  13. For making it's syrup take a small pan and add 4 tbsp oil to it. Put the flame to high to heat up the oil.
  14. To that oil add a tsp of rai and 1 tsp hing.when the rai pops in the oil add coriander leaves and green chillies (split in a half).After that add 1/2 cup of water to it and switch of the flame.
  15. Now to that add 2tbsp of sugar, salt and 2 tsp of lemon juice. When all them is dissolved in syrup turn off the gas.
  16. Now divide the dhokla in equal cubes using a knife. Be gentle and apply very less force or else dhokla would break
  17. Pour the syrup evenly over all the dhoklas. Let the dhoklas drink syrup for a minute and then they are ready to be served.
