  1. Prepare Dosa batter by soaking 1 cup urad dal and 3 cups of rice along with 2 teaspoon of fenugreek seeds overnight. Grind it in the morning, add salt and 2 teaspoon of sugar, cover and let the batter settle for 2 to 3 hours.
  2. Now, you can use readymade schezwan sauce. For making it t home, soak 6 to 7 dry red chillies in water for one hour. Grind it in a smooth paste. In a pan, add oil, mustard seeds and add the chilly paste. Add a bit of water and saute, let it boil for 15 minutes. Add 1 teaspoon soy sauce, 3 teaspoons of tomato ketchup, half teaspoon black pepper powder, salt and 2 teaspoon of lemon juice. Mix well and let it boil for another 10 minutes.
  3. Now on a heated tawa, spread the dosa batter and spread the schezwan sauce as soon as the batter on top dries.
  4. Now sprinkle the tomato cubes, paneer and cheese and let it fry.
  5. At the end add coriander leaves.
  6. Now gently roll the dosa and cut them into broad pieces and your dosa roll is ready. Enjoy these with coconut chutney.
