- Boil the shrimps for 7 minutes if they are fresh or for 4 if they are frozen. Keep the water they have boiled in.
- Remove the shell after boiling (if they have any) and devein them (if they are large).
- Sauté the onion, garlic and shrimps in the oil.
- Stir in a little ouzo, leave for 3-4 minutes and then add the tomato. Let everything boil for a couple of minutes.
- Add 3 1/2 cups of the water that the shrimps boiled into to the above ingredients and then add the orzo, salt, pepper, a little thyme, basil and oregano.
- Boil until the orzo is cooked and there is very little liquid left in the pot.
- Serve while hot and sprinkle on top with coarse chunks of feta cheese.
