  3. And when their color changes add the orzo and stir with a wooden spoon.
  4. Add the tomato passata and 5 cups of water.
  5. Season with salt and pepper and allow it to absorb most of its liquid.
  6. Stir at regular intervals so that it doesn't stick
  7. And when the orzo is cooked (taste to test) but still has a little liquid left, remove from heat and cover with a towel.
  8. Serve with grated cheese.

I had a ton of orzo, and some zucchini that needed to be used. I found some mushrooms and decided they would make a perfect addition.
