For a very thick, almost solid fudge-like ganache which is perfect for making truffles or thick fillings for cookie sandwiches, whoopee pies, macarons, or tarts, you want to use twice as much chocolate compared. Chocolate ganache, that amazing chocolate concoction we use for everything from truffles to glazes and layer cakes, is a simple enough thing.

  1. For the wafers I used the white vanilla wafers, but the milk or dark chocolate will work too!
  2. Mix half a cup of the wafers with the cream and syrup
  3. Microwave in 30 second increments, stirring after each, until melted and combined.
  4. Melt more wafers in a small bowl and, using a spoon, cover the inside of a small mold without filling it completely. I used a silicone rose mold but the make n mold plastic molds will work too. Refrigerate until hard.
  5. Your filling should have cooled by now. Fill the mold almost to the top. Mine is colored because it's left over from another recipe where it was rainbow colors, so they mixed together. Yours will be the color of the wafers.
  6. Cover the filling in more melted wafer and allow to cool until hard

By now your ganache filling mixture should be cool enough to put into the chocolate cases, using a piping bag or a teaspoon, fill them with the ganache, (but not quite to the very top of the chocolate case) Then put them back into the fridge for a while, and once set a little solid, put a "top" of melted. Chocolate ganache (pronounced geh-Nahsh) is a basic pastry component made up of only two ingredients: melted chocolate and cream. This rich chocolatey mixture is incredibly versatile and can be used to make chocolate truffles, dessert sauces, cake fillings, icings, whipped frostings, and glazes. Strain through a fine sieve, pressing the zest with the back of the spoon. Reheat the cream to just under a boil and proceed.
