The ingredients needed to make Sabudana Khichdi:
- Get sabudana/tapioca/sago
- Get ghee
- Get peanuts
- Get curry leaves
- Prepare mustard seeds
- Get lemon squeezed
- Make ready finely chopped coriander leaves
- Get green chilli (optional)
- Make ready salt
- Take Turmeric Powder
- Make ready medium size potato diced into small pieces
Instructions to make Sabudana Khichdi:
- In a large bowl wash sabudana and then soak it in half a cup water for 3 hours or till it becomes soft and fluffy. Drain water in case of excess, and allow the sabudana to rest for extra 30 minutes.
- Heat the ghee in a kadai on medium heat. Add the peanuts and fry till they turn slightly dark. Set them aside and fry some cashews till they turn golden and set them aside as well.
- Add mustard and saute for a few seconds. Add finely diced potatoes, cover and let them cook for two minutes until they become tender.
- Add curry leaves, green chillies, peanuts, cashew and turmeric to the potatoes and mix well. Then add sabudana and salt to the prepared mix.
- Gently mix the sabudana. To finish off add lemon juice and coriander leaves as garnish. Serve as snack.
