- Heat oil in a pan. Add peanuts and fry until golden brown. Remove from pan and allow to cool.
- Add dry red chillies, onion, ginger and garlic in the pan and fry for 3 to 4 minutes. Remove from pan and allow to cool.
- Transfer the peanuts and remaining fried ingredients into a blender. Add tamarind, salt and water and blend to a smooth paste. Remove in a clean and dry bowl.
- For the tempering: Heat oil in a tadka pan. Add mustard seeds and allow it to crackle. Add cumin seeds, asafoetida, curry leaves, green chillies and red chillies. Pour this tempering over the chutney.
